The story

Mughlai cooking leans on aroma rather than heat, and that puts the whole weight on the masala. Nutmeg and mace do the lifting here, with cardamom and cinnamon behind them and cumin and coriander giving it a base to stand on.

The tej patta is grown on our own farm. Spices bought by the sack have usually been sitting somewhere warm for a season before they reach a kitchen; ours have not, and the difference shows up as aroma rather than as anything you can photograph.

Because it is potent, treat it as a finishing spice. A pinch stirred in near the end will carry a dish further than a spoonful boiled to death at the start.

The ritual

  1. Add it late

    Stir a pinch in while the dish finishes, or just before serving. Long boiling burns off the aroma you paid for.

  2. Bloom it if you can

    A few seconds in warm ghee or oil before it meets the gravy will open it up considerably.

  3. Start small

    It is stronger than shop-bought garam masala. A pinch really is the dose.

  4. Keep it dark

    An airtight jar away from the stove keeps the volatile oils where they belong.

Questions

What exactly am I getting?

This one is 90 g, 12 months from the day it is made, and it is korma, biryani, rich gravies and dals worth the trouble. Every batch is prepared by hand in Heul Valley.

Is it really made from farm-grown ingredients?

Yes. The herbs, turmeric and milk come from our own farms and neighbouring households in Heul Valley. We buy nothing from commodity wholesalers, which is also why our batches are small and occasionally sell out.

Will it suit sensitive skin?

There is no synthetic fragrance, no sulphate and no paraben in anything we make, which is what usually causes trouble. That said, botanicals are still active ingredients, so patch-test on your inner arm and wait a day before you use anything new on your face.

Why does the colour or smell vary between orders?

Because the harvest varies. Turmeric grown in a wetter year is a deeper ochre, and the honey changes with whatever is flowering. We do not correct any of it with dye or fragrance, so a little variation between batches is the honest result.

How long does delivery take?

Orders leave our workshop within two working days. Metros usually receive in three to five days, the rest of India in five to eight. Everything ships plastic-free, so nothing arrives wrapped in what we spent years keeping out of our products.

Can I return it?

Unopened items can come back within fourteen days for a full refund. If something arrives damaged or turns out faulty, write to us with a photograph and we will replace it, opened or not.
